Baking Up West Texas Traditions: Laurie’s Famous Texas Sheet Cake Recipe

Hey y’all! It’s Laurie Rodriguez, your friendly West Texas realtor with Key & Slate Real Estate Group, and today I’m stepping out of the real estate world to share one of my absolute favorite things to do—baking! If you know me, you know I love nothing more than spending some time in the kitchen whipping up something sweet and delicious. And in true West Texas fashion, we’re talking about a classic today: Texas Sheet Cake! 🌵🍰


This chocolatey, fudgy cake is a hit at every gathering, whether it’s a family reunion, church potluck, or just a cozy night at home. So, grab your apron, preheat your oven, and let’s bake up something special that tastes just like West Texas.


Laurie’s Famous Texas Sheet Cake Recipe


Ingredients for the Cake:


  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • 1 cup unsalted butter

  • 1 cup water

  • 1/4 cup unsweetened cocoa powder

  • 1/2 cup sour cream

  • 2 large eggs

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 1/4 tsp salt


Ingredients for the Icing:


  • 1/2 cup unsalted butter

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup milk

  • 3 1/2 cups powdered sugar

  • 1 tsp vanilla extract

  • 1/2 cup chopped pecans (optional but very Texan!)


Instructions:


  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease a 13x18-inch baking sheet, also known as a “jelly roll pan,” to get that iconic sheet cake texture.


  2. Make the Cake:

    • In a large bowl, whisk together the flour, sugar, baking soda, and salt.

    • In a saucepan over medium heat, melt the butter. Add the water and cocoa powder, stirring until smooth. Bring the mixture just to a boil, then remove it from the heat.

    • Pour the cocoa mixture into the dry ingredients and stir to combine.

    • Add in the eggs, sour cream, and vanilla, and mix until smooth and fully combined.

    • Pour the batter into your greased baking sheet and spread it evenly.


  3. Bake: Pop the cake into the oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.


  4. Make the Icing While the Cake Bakes:


    • In another saucepan, melt the butter over medium heat. Add the cocoa powder and milk, stirring until combined. Bring it just to a boil and then remove it from the heat.

    • Gradually whisk in the powdered sugar and vanilla until the icing is smooth and glossy. If you like pecans, fold them in now for that extra Texan crunch!


  5. Pour the Icing on the Cake: As soon as the cake comes out of the oven, pour the warm icing over the hot cake and spread it evenly. The icing will set into a fudgy layer as the cake cools, giving it that classic Texas Sheet Cake finish.


  6. Cool & Serve: Let the cake cool for about 20 minutes before slicing into squares. Enjoy with a cold glass of milk, West Texas style!
